Decaffeinated Mexico Chiapas [Certified Organic and Fair Trade]
We roast this coffee with cherry wood, to medium dark. We find it delightfully spicy, with a cinnamon sweetness. It blends well with our caffeinated Mexican coffee for a half-caff, drink-all-day treat.
From the 2,600 small farmers that belong to the Grupo de Asesores de Producción Orgánica y Sustentable (GRAPOS) in Chiapas, Mexico. The GRAPOS cooperative has helped to support crop diversification, as well as coffee rust research, mitigation and prevention. The beans have been organically grown and fairly traded in accordance with Fair Trade USA.
This coffee has been decaffeinated using the Mountain Water Process, which is similar to Swiss Water Process. Essentially, the beans are soaked in hot water to remove the caffeine and oils, the water is filtered and the caffeine removed, and then the oils are returned to the coffee beans and very little flavor is lost.
